Tomato Apple Chutney

Ingredients
20 medium, ripe tomatoes, peeled and chopped
8 apples, peeled and chopped
3 large onions, chopped
2 large, sweet red or green peppers, chopped
1 hot red pepper, minced
1 cup seedless raisins
2 cups brown sugar
1 clove garlic, crushed
2 teaspoons each ground ginger, cinnamon
1 teaspoons salt
3-1/2 cups vinegar

Preparation
Combine all ingredients in a heavy, covered saucepan and simmer for about two hours or until mixture is thick. Stir frequently to prevent sticking. Pour boiling hot into hot, sterile jars. Leave 1/4 inch headspace. Process 20 minutes in a boiling water bath.
