Spicy Tomato Ketchup

20 tomatoes, peeled and chopped
1-1/2 cups onions, chopped
1 cup green peppers, chopped
3/4 cup sugar, white or brown
2 teaspoons celery seed
2 teaspoons plain (noniodized) salt
3/4 teaspoon each cinnamon, cloves, ginger, allspice
1 cup vinegar

Mix all ingredients in a large, heavy saucepan. Bring to boil and simmer, stirring, until thick. Pour boiling hot ketchup into hot jars. Leave 1/2 inch of headspace and adjust lids. Process 20 minutes in a boiling-water bath.

Makes about 6 pints.
