Spanish Rice Casserole

1/4 cup chopped onion
3 tablespoons chopped green pepper
1 cup raw short-grained rice
2 tablespoons oil
1 teaspoon sugar
2 cups stewed tomatoes
4 pork chops or 1/4 pound hot sausage
1/2 cup grated Parmesan cheese

Saute onions, green peppers and rice in oil until rice is translucent. Add sugar and tomatoes to skillet. Top with pork chops and cheese. Bake covered, in 350oF oven for about one hour.

Serves 4.
