Fast Flower Arranging
There are literally hundreds of books on flower arranging, but those by Jane Packer always stand above the rest. Packer is a successful London floral designer, and she offers details for making 120 informal yet sophisticated arrangements that require no more than three simple steps and five minutes in her book, Fast Flower Arranging (DK Publishing, 1998; $20).


Tropical Cooler with Pineapple Sage and Mint
Refreshing and good for you besides, this drink is the perfect antidote to hot summer nights. This recipe is adapted from the book The Herbal Palate Cookbook (Storey Communications, 1996; $19.95), written by myself and Sal Gilbertie.

1-1/2 cups water
1/4 cup fresh pineapple sage leaves
1/4 cup fresh mint leaes
1 tablespoon minced fresh ginger
2 cups pineapple juice
1-1/2 cup papaya nectar
1 cup orange juice
1/4 cup fresh lime juice
1 quart sparkling mineral water, chilled

Bring the water to a boil and pour over the pineapple sage and mint leaves and fresh ginger in a heat-proof bowl. Steep for 15 minutes. Strain and discard the herbs.

In a pitcher, combine the herb tea with the juices. Cover and chill. Just before serving, add sparkling water. Serve immediately, garnished with fresh pineapple sage or mint sprigs.

Makes 2-1/2 quarts.
