Tomato Cucumber Basil Triumvirate Galore Salad
This is the salad I dreamed of during this winter. I vainly attempt to approximate it using vegetables from the market, but I can't wait until my own produce is in to make this recipe.

1 large garlic clove (or more, to taste) Use only fresh garlic; the bottled chopped garlic doesn't have the same fragrance or flavor.

1 teaspoon Lawry's Seasoned Salt

6 tablespoons oil

3 tablespoons Balsamic vinegar

3 tablespoons white Mirin (Japanese rice) vinegar

1/2 cup fresh, sliced basil leaves (or more, to taste)

1/4 cup fresh parsley, roughly chopped

2 teaspoons fresh oregano or marjoram leaves (or more, to taste), roughly chopped

4 large tomatoes, preferably different colors, each cut into large mouth-sized pieces

2-3 large cucumbers, sliced (peeled or not, according to your preference)

In a large bowl, mash garlic with Lawry's salt. I use a mortar to assure thorough mashing. Add oil, vinegars, and herbs. Toss and thoroughly combine. Add sliced cucumbers. Toss to coat. Add tomato pieces. Gently turn to coat. Every 15 minutes, again gently turn to recoat all tomato and cucumber pieces. Continue marinating for 1 to 2 hours, depending on your taste. Serve in bowls with marinate that has been thinned by juice exuding from tomatoes and cucumbers.

Serves 4 to 6
