Purslane, the Edible Weed
It's wonderful to have something bright green growing in the garden all winter, and this includes even some weeds. You'll recognize purslane as the weedy relative of portulaca. Its succulent branches and leaves contain many vitamins and minerals, offer somewhat tart, citrus flavor to raw salads, and make wonderful stir-fries or ratatouilles. But then, what greens aren't wonderful when added to sauteed onion, garlic, and parsley?
