Arizona Highlands Garden Conference
High desert gardeners have a terrific opportunity to attend a conference addressing their challenging growing conditions. Sponsored by Gila, Coconino, and Yavapai County Cooperative Extension offices, the first annual Arizona Highlands Garden Conference will be held at the Tonto Natural Bridge State Park, September 7 and 8.

Anything Goes Vegetarian Gumbo
When I'm craving vegetables, this gumbo hits the spot. I use whatever vegetables I have on hand and adjust the seasoning for my tastebuds that day.


2-3 tablespoons olive oil

1 medium onion

3-5 cloves of garlic

1 green bell pepper

1 hot pepper (or 1 teaspoon of chili pepper), optional

5-6 fresh medium tomatoes (or 1 28-ounce can of tomatoes)

3 cups okra

3 cups of other chopped vegetables in any combination, such as cabbage, green beans, or collards

1 small can of vegetable broth

fresh sprigs of basil, oregano, or thyme (or use dried) according to your tastes


Chop and dice the vegetables. Saute onion and garlic for two minutes in olive oil. Add peppers and saute until soft. Add remaining ingredients and simmer for about 20 minutes. Season with salt and pepper to taste.

Serves 4 to 6.
