Sweet & Sour Red Cabbage
Although temperatures are heating up, cool-season cabbage is still being harvested in my garden. If you're looking for something to do with all that cabbage, here's an easy alternative to making the endless bowls of coleslaw.

1-2 teaspoons canola or other oil

1/2 large onion, diced

1/2 head of red cabbage, chopped

1/2 cup applesauce

1/4 cup red wine vinegar

1/8 teaspoon black pepper

1/8 - 1/4 cup sugar

dash cloves

Heat oil and saute onion until soft. Stir in all other ingredients. Cover and cook until cabbage is desired texture, about 7 to 10 minutes.

Serves 4 to 6.
