Herbal Vinegar
Not to blow my horn too loudly, but I did write a book on herbal vinegars that turned out pretty well. It will give you all the details on making a variety of herbal vinegars: Herbal Vinegar (Storey Books, 1994; $15).


Spiced Red Cabbage with Apples and Onions
Here's a great late summer/early fall recipe - yes, cabbages, apples, and onions do go together!


2 tablespoons canola oil

1 medium red onion, thinly sliced

2 apples, cored and diced

2 pounds red cabbage, finely shredded

1/2 cup dry red wine

1/2 cup vegetable stock or water

1/4 cup red wine vinegar

2 tablespoons packed light brown sugar or 1 tablespoon honey

4 whole cloves

3-inch cinnamon stick

Salt and freshly ground black pepper to taste


Warm oil in a large, heavy, nonreactive saucepan over medium heat. Add onion and apples and saute until golden, or about 6 minutes, stirring occasionally. Add remaining ingredients and stir to combine. Reduce heat to low, cover, and cook until the cabbage is tender, about 25 minutes. Remove the cinnamon stick and whole cloves before serving.

Serves 4
