Southern Gardening Symposium
I don't know what I like best about Callaway Gardens' yearly Southern Gardening Symposium -- the speakers, the gardens, or the food! Alabama Caviar
Call this dish black-eyed pea salsa if you like. You can vary the beans by using black beans or purple hulls. Serve with crackers or corn chips, or present it as a salad on lettuce-lined plates.


1 can black-eyed peas, rinsed and drained

1 jalapeno pepper, seeded and minced

1 plum tomato, chopped

1 stalk celery, finely chopped

1 small clove garlic, finely minced

1 scallion, thinly sliced

3 tablespoons cilantro or parsley, finely chopped

1/2 teaspoon cumin

1/2 teaspoon salt

1 tablespoon lemon or lime juice

1 tablespoon balsamic vinegar

1 teaspoon olive oil

1/2 teaspoon sugar (optional)


Mix all ingredients in a bowl. Cover and chill at least 2 hours. This recipe will keep in the refrigerator for 5 days.
