Christmas Tree Traditions

Vegetarian Chili
Cold weather requires warm soups. As a vegetarian, I've adapted a classic chili recipe, removing the meat and adding soy and lots of vegetables. You can make it as spicy hot as you like by adding more cayenne. Make a double batch - it tastes even better left over.


6 cloves garlic, chopped

2 cups chopped onion

3 tablespoons olive oil

2 cups canned kidney or pinto beans (you can mix and match)

2 quarts canned tomatoes

3 cups water

2/3 cup ground soy or texture vegetable protein

1 cup chopped green pepper

1 cup chopped carrot

2 teaspoons cumin seed

2 teaspoons chili powder

1 teaspoon ground coriander

2 teaspoons dried basil

1 tablespoon dried oregano

1/2 teaspoon cayenne pepper powder

2 teaspoons salt

2-3 bay leaves


In a frying pan saute the chopped garlic and onion in olive oil until translucent. In a large saucepan, add the beans, tomatoes, water, garlic, onion, and all the remaining ingredients. Bring to a simmer and cook for 1 hour. Remove from heat and serve.

Serves 8 to 10
