Can I use grocery store-bought potatoes as a source of seed?

In theory you can, but there's no guarantee that these are free of disease. Specially grown seed potatoes undergo rigorous testing for diseases before being allowed to be distributed and commercially grown potatoes (farmers) for stores (the initial seed potatoe) always are.
