It almost looks like someone poured acid on it. I recently moved my herb barrel underneath a shade screen to protect it from the AZ summer sun, and I've noticed it starting to look like this. I water every day, and none of my other herbs are looking like this. Any ideas?

Don't water every day because that will cut off the oxygen in the roots causing stress to the plant. Stress plants are attacked by insects. Take a magnifier and get a good look at both sides of the leaves and find out what kind of insect are eating your plants.
