I acquired this plant and know nothing about it. Do these bloom with flowers? Do these attract pollinators? Any benefits of this plant in the garden?

Probably similar to this variety, if not the same. Beefsteak Plant (Perilla 'Magilla')
Grown mostly for it's foliage, like a coleus. I always snip off the blooms to promote a fuller plant but allow it to bloom later in season, but that's my personal preference.

Do these plants flower through the fall? Our garden area is packed so having a plant that does not bloom is kind of pointless to me. Im not really into leave colors. I like flowers.

Of all the photos in that link above, only one shows a flower.

I guess it's all relative, these leaves certainly would not be classified as 'pointless' for adding color to a garden in my opinion. Shrug!
