Does anyone know what could be responsible for eating these leaves (laburnum tree)? It leaves a sticky substance on the leaves, but there appears to be no trace of what is doing this!

seems to have webbing like a caterpillar would leave. Look further along the stems. They may have moved (or pupated?) before you saw this damage.

Other thought would be look at night; some insects eat at night.
Plant it and they will come.
