I have lived in present location for 2 1/2 years and have most of 1 acre property well on its way to be manageable. However no matter how hard I try I am plagues by a persistent, large and extremely thorny plant/weed. I can grow to almost 5' if left on its own. Seems to have a main tap root and roots don't seem to be attached to neighboring ones but seldom is it a single plant but left unattended it seems to spread. What is it and what's best method for eradicating?

It is a thistle. Very deep taproot and hard to pull it and get all of the root. If you don't get 100% of it, it can grow back.
I would go to Home Depot or Lowe's and have them recommend a weed killer. Otherwise you'll just be wasting your time.
