French heirloom patty pan. Tender when picked young, with thin, delicate skin. Rind varies from light green, to yellow, to radial green stripes on ivory squash (young fruit may not show streaking). Can be matured to the hard shell stage and used as an ornamental, or cooked like a winter squash. Long harvest period, prolific.

Roots are sensitive to disturbance; sow in biodegradable pots that can be planted directly into the ground. Transplant when soil temperature is at least 60°F.

Young squash are light green to white with no variegation. They become variegated as they get larger and older.
