When starting onions from seed, do they require a heat mat? Is there a list somewhere that specifies which plant variety requires a mat and those that do not?

Welcome!

I don't know if there's a list but, if you Google "germination temperature for ______", you will find information about whatever you put in the blank.

For onions: "Onion germination is fastest as 68-77°F (20-25°C), with slight temperature drops at night."
