I have my jade plant all repotted up for about a week now but my leaves are are not firm . I have not watered it . Is it ok to water it?

Until the Jade grows roots, it is living off stored energy in the stems and leaves. Wilting is to be expected. You are good unless it turns into a pile of slime. You can water it but let it get super dry before watering again. Plants without roots can't use the water so if the soil stays too wet too long, the cutting will rot.
