Ok so I just noticed my zucchini is rooting above the surface. Should I put in a little more dirt, up to its first leaves? Will it grow roots along its stem if I cover it?

You are watching that zucchini way too closely! Squash do grow roots on their stems. No, don't bury them, but if they go into the ground, be careful not to pull them up.
