Help! My basil plants seem to do fine then start to wilt. What is happening?

You have to let the soil dry well before watering, because if you double water basil, it will wilt. Here's a photo of my basil I have growing now. I let the container get very light weight before watering. I give them a dry time between the waterings. These are in one gallon pots and I watered them this morning. After watering they are heavy with weight and will be good for about 5 to 7 days. .
