First time growing my own lettuce and I noticed these spiny white things on some of my arugula plants. Is this normal?

I've never grown this, though I hope to this fall. But, I would say that it looks like it is probably normal to me. Seems the edible leaves are growing off this stem. The hairs may be a protective feature of the plant to keep bugs from crawling up them. Or, I could be way off base with my thoughts. nodding

If nothing else, I've given your post a bump so maybe someone else will chime in that is more knowledgeable than I am. Thumbs up
