I've had a bunch of different squash/pumpkin seedlings come up from my compost and I haven't had any luck differentiating between them from their leaves but I can tell that they are all different. These are three different plants.
Can anyone tell me what these are - specifically what they will produce?

What kind of seeds did you throw into the compost pile? Were they from squash/pumpkins from the grocery store? From squash/pumpkins you grew?

Plants from seeds in a compost pile are almost certainly hybrids of something. Whatever they are, you will know when they set fruit. You could have the most interesting squash on the block this summer. Smiling
