I am after some advice for my cheese plant cutting.
I had in soil but noticed it started going black at the ends and rotting.
I cut of the black ends and put it in a jar with water and within a few hours the ends started to go black again.

Should I keep it in water or put it back in soil?

Oh my lord not again.
You have been the victim of a node flipper.
I would trim off the rot on top with a razor, treat with fungicide and place in damp (not wet) sphagnum moss.

You have no node above those roots for new growth to come from. You may be able to get a new shoot from that eye below the root but its not a guarantee.

I brought this cutting on eBay a couple of weeks ago.

Yes eBay is a big source of node flippers. Some of these folks (I am not saying ALL of them, but a lot of them) import these cuttings from Asia and never grow the plants themselves they just resell the imported cutting
