The Latin name of the plant is Sambucus ebulus. It is considered "mildly toxic", so I guess I shouldn't put its leaves in the compost pile but I have a lot of it and I would be glad if I could use it. Can you give me some advice?

Yes you can compost it. Sambucus racemosa is the one with mild toxicity and will only give a mild tummy ache.
