I want to basil plants to go seed. Is it fine if I harvest like 2/3 leaves of it?

It will not go to seed if you keep pinching the tops off, so let some of the stems grow and harvest leaves off others. The flowers, hence the seeds, form at the ends of the stems, like this:

For me, gardening is really just an excuse for playing in the dirt. Admittedly, plants are a satisfying by-product.
