How do I know when to harvest ginger? I planted my ginger root on a whim, and now it has flowers shooting out from the roots which have become very large. Do I wait for the flowers to die off? Why do the flowers have a few petals, then drop off?

After the ginger is done blooming, the stems should start to yellow and fall over. That's when you dig them up. That happens 8 or 9 months after planting.
