I have thai chilly peppers and when they are 100% red ready to be picked, some are soft to the touch. I feel like there's nothing inside but others are firm.

What's the cause for the soft ones please? Lack of water?

Sometimes it could be lack of water, but red peppers are ripe, and many of them don't stay firm when they are very ripe, and they tend to fall apart quicker because they are too ripe.

Unless there's something visibly wrong with a pepper, I've always thought they were just beginning to get a tad overaged when they start getting soft...at least for jalapenos, bells, bananas, etc. When ripe the jalapenos are red but still firm...over time they soften if not picked. I'm not familiar with thai chillies but I figure they'd probably age similarly.

@Intheswamp The only visible thing I see with the soft thai chilli peppers is there's some wrinkle on it.

I'd say that was probably normal. You want to might post a photo of the entire plant and then a close-up of the peppers for folks to look at, I'm not saying photo will help but it won't hurt anything, either. Thumbs up

The more aged and the longer they are on the plant, the more the wrinkles as they dry out, I have a whole plant of tabascos doing the same thing right now.
