Fruit is one thing that's hard to come by in winter, at least if you don't have space for large trees that allow you to put away long-storing fruits such as apples and pears.

Im glad I bought extra peaches last August and processed them in my dehydrator. They were great with steel cut oats this frosty morning.
You can also dry kiwis, apples, pears, and just about any other fruit or vegetable to take c are of over production during the summer months.
