The first one I'm drawing a blank on.
The second looks like a canna.
The 3rd is commonly called blackberry lily.

The first one I'll hazard a guess that it is a type of Copperleaf (Acalypha wilkesiana).
I agree with Ann on the other two.

Canna is also the one you found the seeds from. You can look up the plants in the plant database. Here is the link for (Acalypha wilkesiana)

The first one could be a Perilla frutescens. If the leaves taste like licorice that could be it.
