I needed the star anise for the blanching (+ ginger and scallion to get rid of the smell of the trotters). The recipe can also be used with pork belly instead of trotters/feet, I guess you can make them using pork legs---I had never eaten the trotters----very curious----
Has anyone read Herge's Tintin series? I am reading Tintin Destination Moon and Explorers on the Moon Copyright 1959 (English) and 1954 (Dutch: Kuifje Mannen op de Maan). Lots of intrigue --lesson: being addictive in gambling can be very dangerous-- so far my favorites are Tintin in Tibet and The Blue Lotus. Both books Herge /RG wrote giving his Chinese friend Zhang a role in the 2 books. they became friends in Belgium where Zhang was studying art. Flight 714 is also very interesting, Background was Indonesia still fighting for independence where there was also extra terrestrial and flying saucers played a role, also the huge lizard of Indonesia was seen in the islands--and hypnotism used so they did not remember anything-Earthquakes, volcano eruptions----very exciting--
Back to food, I love to use condensed milk to make a coffee with avocado drink, using ice and 2 expressos. The Amarican wife of an Indonesian used their special very popular recipe when they had a party in their house by instead of coffee they used Kahlua and then lots of ice and condense milk and blended the avocados and served in glasses.--
