I never had those potato cakes at Arby. The Arby near me has crispy fried fish that I like, eat with honey mustard, and those curly fries. I just checked and they do have those potato cakes. I am supposed Not to eat potatoes because of my arthritis, but potatoes are one of my favorites, so I just ignore it. Long time ago I went to Baltimore with colleagues to a Beer Brewery restaurant, they had the best garlic potato wedges. Maybe 2 or 3 years later I went there again. No more garlic potato wedges!
I FINALLY found my colleague's husband's recipe, it is sweet, I always used it with cabbage and I add hot peppers in it, delicious. --He is Jewish and she is half Chinese.
Tom's pickled cabbage.
Container:
1 empty pickle jar
Pickling liquid:
½ cup white or rice vinegar
½ cup water
½ cup sugar
1 teaspoon kosher salt
Vegetables:
About 3 cups of:
Sliced cabbage
Chilies
Red onion/shallots
Green bean, etc.
Heat vinegar, water, sugar and salt in a saucepan. Stir until sugar and salt dissolve, then let cool.
Put vegetables in the empty jar, then cover with the pickling liquid.
Refrigerate overnight, and serve cold.
