Hey everyone. So we got a lot of rain the other day--2 1/2 inches--and a bunch of my tomatoes split and need to be used right away. What ideas do you have for using them besides canning or pasta sauce? Recipes would be great; all I ever do with them is put them on salads and can them for pasta sauce...... Thank you in advance!

Hi Michelle,

I make a lot of tomato juice from extra tomatoes and a bit "over" ripe works great. It will last a long time in the icebox in a pitcher. I love a cold glass of tomato juice by itself or as a mixer. Thumbs up

We also enjoy open face toasted tomato and cheese sandwiches for dinner when we have lots of ripe ones. Just put mayo on bread, slice tomatoes to cover the bread, put cheese on the top and put them in a convection or toaster oven. Yummy. Sometimes I blot the tomato slices with a paper towel if they're really juicy just to keep the sandwich from being soggy.

If they are reasonably meaty, roast them. Saute them in a bit of oil.
Have Creole for supper, squash, onions, tomatoes and sausage, over rice even, can add peppers, eggplant, yummm
Extinction is the rule, survival is the exception.

Nice tomatoes.
How about bruschetta? Just had last night.

I make a version of V-8 in blender, sometimes call it V-6 or 7 depending on how many ingredients. If too much to drink immediately, I freeze in Tupperware squares. After they are frozen cubes, can run quickly under water to release from Tupperware and put frozen cube in zip lock bag or seal-a-meal bag and put back in freezer.
