What causes the pland to change its bloom colour from original colour

I think there are numerous things that can cause flower color to change; soil PH, soil nutrients, air temperature, light conditions ...

I would add to that Natural deviation , cross pollination, genetics in a hybrid, or worst of all grower dyed plants , such as the Phalaenopsis orchids that you see in every market these days
