We eat green beans almost everyday and I make soups with dried beans on a regular basis.
I love Pinto, Black , Blackeyed, Limas, Myacoba, Garbanzo, Lentils, and all their relatives.
Not only are they high in protein but also contain vitamins minerals and fiber, at a very reasonable price.
I usually make a large pot of soup and freeze what we don't use that day in serving containers, they make a wonderful easy meal in a hurry.
I usually make it without meat, but with some bread or crackers and cheese, and maybe a salad they make a vey well rounded meal. Smiling

January seems like an odd date for 'bean day' but what the heck. Perhaps the intent is to bring attention to all the bean varieties for those making their seed orders. I only grow green and yellow snap beans, but between those two there are many cultivars to choose from.
I want to live in a world where the chicken can cross the road without its motives being questioned.

Hi folks...
Beanhead here. ("Beanhead to Bonehead, come in?" Nice to see you.) Hello frostweed, hope all is well your way.

I eat beans on a regular basis, probably more in the winter than summer. Fresh-picked butterbeans and cowpeas, harvested and cooked to perfection then frozen in supper-sized freezer bags. Delish; just pull 'em out and reheat and good to go.

I also buy dried beans of certain types and cook 'em alone or put them in soups and stews. Much better than the canned beans cus you get to flavor them as you choose plus you can determine how much salt or whatever you like in them. (And if you put a pinch or so of soda in the soaking water it'll cut down on the "exclamations" that sometimes burst forth from one's south end.) *Blush*

Frostweed, I'll have to google myacoba. Finally a bean I don't think I've tried.

Happy Bean Day, All!
