My niece ripped majority of the leaves off and now all that is left are one and a half leaves. In a panic, I tried to water the plant, hoping that it would help but I overdid it and some of the roots rotted. The weather in Northern California has been unusually rainy and incredibly humid so I'm worried about watering it again. This is my first monstera so I'm completely clueless on how to be able to fix this.

Because the plant lost leaves it would have needed less water rather than more because most of the water a plant takes up are lost through the leaves. Fewer leaves therefore means lower water requirement. Fewer leaves also need fewer roots - the plant actually looks OK to me other than having been attacked. I would just water it whenever the soil feels dry if you poke a finger a little way into it. There isn't anything much else you can do other than give it time to regrow and fertilize occasionally.

Give it some time to recuperate. They are resilient plants. Hope you're somewhere that you can give it some outdoor time too!
