My grandpa called it a never die, but when I looked it up that didn't narrow it down much lol. Maybe it is a sedum?
And should I pull those dead stems or will they come back to life?

The dead stems won't do anything and they can be removed. Each year it makes all new growth.

Cut the stems down as close to the foliage as you can get.. I have several varieties, and they all are bee magnets. Easy and rewarding.
When counting, try not to mix chickens with blessings.
