How many pounds of onion sets are in a gallon ?

Depending on the type of onion there could be anywhere from 80 to 200 in one dry pint; multiply that by 8 dry pints in a gallon and you have whole lot of onion sets. Anywhere from 640 to 1600?

But she asked about weight. One vendor I looked at shows 4000 to 5000 onion sets weighing 32 lbs.

Edited to add: Another vendor shows onion sets at 25 to 40 bulbs per pound. Using the 640 to 1600 in a gallon figure, that would be anywhere between 16 lbs to 64 lbs.
I think a lot will depend on the size and type of onion set.
Confidence is that feeling you have right before you do something really stupid.

A long time ago I was taught dry weights in grade school. Forgotten all of it. I still remember that gallon of water is 8lbs. Onions have a similar density so around 8 lbs give or take a lb or so. A little Googling. Indicates 30lbs per bushel for sets which indicates a shade under 4 lbs/ gallon. Market size onions about 7lbs per gallon
