I have a large staghorn fern(several of them) I live in 34135 zip code) i want to take them to my new home (zip code 31522) If I cut off all the huge leaves and just leave the Plate or mantle, not sure what that is called, will it survive and start up again???

That would be a radical way to transport your Staghorn, but it probably would survive as long as you leave the roots and shield frond intact and appropriately moist. I suggest that you leave as much of the fertile fronds as possible.
