I have started growing corn plant inside and a few of them look eaten at the top, at first I though this was just my cat having a snack lol but I have managed to keep her out of my grow room and yet I still have this problem. Does anyone have any idea what this could be?

Some kind of bug.
Do you keep potting soil in grow room ? If so get it out. It could be source.
Then. Get some diatomacous earth and dust plants and top of soil.
Also : If you want ! Go hunting ! 👺 for snails slugs earwigs pill/sow bugs. Look under pots and in bag of potting soil.

Roaches will eat corn off the cob... don't know about seedlings.
Roly polies will occasionally nibble stressed seedlings, unlikely you have any of those indoors...

I think a mouse or rat is a far more likely suspect...

although... if you have a cat or dog?

A determined cat is almost as dexterous as a determined raccoon. Get the cat a pot of "cat grass" to munch.
