Is my plant baby growing multiple heads on one plant? Whatever's happening looks different than other young echeverias I've seen. Hurray!

It looks like your echeveria is happy and putting up a bloom stalk! Enjoy the bloom, and then wait to cut the stalk. You may get seed pods. When it's dead and dry, you carefully cut the stalk off and it will most likely bloom again for you next year.

Yay! Thanks. There's actually a dried up bloom stalk on it already. Any tips on getting the seeds? I haven't had a succulent flower before.

Most of the time, pollination hasn't taken place and there won't be seeds. If you do see a seed pod form, then you let it go until it turns brown and splits. Sometimes it's good to bag them with something toward the end, so they don't end up scattered.
