I got this and it was labeled Rainbow Cactus, but I was wondering if that was correct? How much should I water it and how often? Thanks!

Maybe an Echeveria. It may be a seedling of an Echeveria called 'Ruffles'.

Kalanchoe is the first thing I thought of but my eyesight isn't the best.
Flapjacks (Kalanchoe luciae)
Paddle Plant (Kalanchoe luciae subsp. luciae)

And now that I see the photos in the database of Echeveria 'Ruffles' I think with the ruffled edges on your plant, @Daisyl's ID is more accurate!
