|should I or could I, plant a gardenia bush between 2 rose bushes?|

Gardenias and roses will get along just fine since they both like acidic soil. However, it largely depends on how far apart the gardenia will be to the roses. Gardenias tend to get tall and wide and if too close to the roses would eventually overtake them depriving the roses from much needed sun.
