It looks like maybe a type of Amaranth.

If you pull up a plant and the root is reddish in color, it could be Red-rooted Amaranth (Amaranthus retroflexus)
Sunset Zone 28, AHS Heat Zone 9, USDA zone 8b~"Leaf of Faith"

Yes, pulled a bunch and they're red right below the soil.
