|I'm a rookie at this. I have knock out roses that have the stamen looking like this. Is this normal?

Welcome to the community. It is certainly normal for the stamens in a rose to change color after it has been open for a day or two.
Here's an example on Darlow's Enigma
Bees were very busy polinating these when I took the photo. I believe the bees go for the brightly colored stamens which signal that the rose has not yet been visited/polinated.
