I ordered some seeds that were supposed to be an Aloe mix, but I ended up with something that is definitely not Aloe. My best guess right now is some sort of Mimosa?
Pictures attached. Its leaves fold up at night, but they do not fold when touched (like the Mimosa Pudica). Started seeds in early April, making the plant about 5 months old in these photos. The seeds germinated pretty quickly – in about a week if I remember correctly. Growing indoors.

Sure looks like a Mimosa (Albizia julibrissin). Do you still have some seeds that you can show us?

"Mimosa tree" (Albizia julibrissin) and "sensitive plant" (Mimosa pudica) are often confused by the nickname of the former being the genus name of the latter (and other species of Mimosa genus.)
Agree it looks like A. julibrissin.

I hadn't thought of Acacia dealbata but the seeds are distinctive. We need a photo or description of the seeds.
They often grow with Aloes? You mean they are found together so the seeds may get mixed up?
