I am a university student, trying to gather some ideas for an assignment.

I would like to get your thoughts on what the challenges would be in marketing fruits and vegetables. I am having difficulties coming up with ideas on how to brand these produce items since they're usually seen as a commodity.

Welcome to the NGA.
Freshness of fruit and veges would be important.
Pricing would need to be competitive with other sellers.
How they are packaged would be important.
Convenience to the buyer would be another consideration.
Seasonal relevance.
Attractiveness of product.

Apples are one of the few fruit/veg items that are sold and priced by variety- Gala, Fuji, etc. Is that branding of a kind?
