I have cut the stalks off my Hen and /chicks they are in my garage drying. can I take the seeds and plant them next spring?

I am a little confused by your question... When you say "stalks" do you mean bloom stalks or rosettes from the parent plant? Are your hens and chicks Echeveria or Sempervivums? Do you have seeds? Or expecting seeds? Can you post some photos?

they are sempervivums.,the stalk comes from the plant. the seeds are on the stem of the stalk. I cut the stalk off. after cutting the stalk off the plants have turned yellow

Sempervivum grow for several years, producing lots and lots of offsets (the chicks). Then they bloom and after the bloom is done, the hen dies. Cutting off the bloom did not kill your plant.

I'm not sure if you have seed or not - I have never seen one go to seed but I'm sure its possible. Usually, they are propagated by all the offsets. However, this year I noticed that Big Box stores were selling Semps that had already started to bloom.
