I have dozens of unopened buds on my rose of sharon plants and we're expecting a freeze tonight. Should I cut off the buds?

You may do more harm than good by cutting off the buds as a frost may damage the cut ends of the plants and cause die-back.
Rose of Sharon (Hypericum) is fairly tough and should survive a frost.
Wrap some horticultural fleece around the plant if it is very exposed and you are concerned it may be damaged.

I always think Hibiscus syriacus when I hear "rose of Sharon."
Roses of Sharon (Hibiscus syriacus)

A very hardy plant that shouldn't need any care at all.
