The flowers have now turned white. Should I cut them off? Will they grow back with that beautiful pink color?

Is this the type of plant that you have?
Globe Amaranth (Gomphrena 'Pink Zazzle')

If so, the faded-to-white flower heads are dead flower heads. Cut them off and the new flower heads that form will be pink. This variety is sterile and doesn't set seeds. Smiling
